Hey friends! With school started back up and busy nights, figured plenty of people might need some recipe inspiration for those nights whenever you don’t know what to do! Most of the meals we cook are easy to throw together and we enjoy! We also love to try new things also.
I’ll put the grocery list, which includes everything but some items you may already have but wanted it to be all in one place for you guys + it has all the meals and how to cook them below for your reference. Also, as a note, we go grocery shopping once a week and we make whatever we planned that week. Some weeks we cook a little less, it just depends on our schedule and plans. We also never plan meals for Friday-Sunday because usually that’s our time with friends, family, date night and things like that!
Some of these look long but I promise they’re quick to throw together.

I’m not about to explain this one since it’s not our recipe but you can check out these this guy or this guy on TikTok and they have similar recipes. I can’t remember which or where we found ours. But it’s so good.
PEPPEROCINI CHICKEN + GREEN BEANS + SALAD
- Chicken
- Pepperoncini Peppers (sliced)
- Butter
- Ranch Seasoning
- Cajun Seasoning (Optional)
- Au Jus Gravy Mix (Optional)
- Monterey Jack Cheese
Turn your oven to 350 to preheat. Get your glass baking dish and place chicken in the dish, place butter on top of each piece of chicken and just a little on the bottom of the dish (honestly more or less depending on personal preference). Then you will put as little or as many pepperoncini peppers on top of chicken as you’d like (we like to put more than less). Pour about 3-4 tablespoons of the pepperoncini juice in the bottom of the dish, sometimes I put more based on personal preference. Dump ranch seasoning mix on top, at this step you can also put the cajun seasoning and au jus gravy mix if you’d like. I usually don’t do the gravy mix but it changes the flavor. Bake on 350 for about 30 minutes, add some monterey jack cheese on top and cook for about 15 more minutes or until chicken is cooked all the way through.
Serve with your veggie of choice and a side salad!
MEXICAN LASAGNA
- Ground Meat (or Ground Turkey)
- Mexican Blend Cheese
- Salsa (of choice)
- Black Beans or Pinto Beans
- Corn (you can always leave this out)
- Tortillas (we use the carb smart)
- Taco Seasoning
- Limes
- Jalapenos (optional)
Turn oven on 450 to preheat. Brown and drain ground meat, stir in taco seasoning and salsa; simmer on low for about 10ish minutes. Spread some of the ground meat mixture on the bottom of you baking dish, add beans, corn, cheese then place tortillas on top. Repeat the layers and then top with cheese. Cover with foil and bake for 30 minutes.
You can serve this alone or some chips and salsa. You can also add sour cream, avocado or anything else you like on top!
BBQ CHICKEN PIZZA
- Pizza Crust (We only use THESE from Target)
- BBQ Sauce (of choice – we like Stubbs)
- Purple Onion
- Cooked Chicken (We usually cook the chicken earlier in the week – we season with THIS or THIS)
- Mozzarella Cheese
Turn smoker on between 350-400. Place crust on your pizza or cutting board, add bbq sauce, cooked chicken, purple onions and cheese. Place pizza on and smoke for about 15-20 minutes, varies depending on the smoker and how crispy you like your pizza.
SLOPPY JOES
- Ground Meat
- Onion
- Bell Pepper
- Minced Garlic
- Butter
- Light Brown Sugar
- Dijon Mustard
- Mustard
- Worcestershire Sauce
- Pickapeppa Sauce
- Liquid Smoke
- Chili Powder
- Smoked Paprika
- Cajun Seasoning
- Ketchup
- Apple Cider Vinegar
- Salt and Pepper (to taste)
- Buns
This will be hardest to explain because I measure NOTHING so I put estimates above and sometimes I add extra spices….lol
Heat a large skillet and add butter, onion, bell pepper and garlic. Once this cooks add ground meat, allow meat to brown then strain. Now combine brown sugar, mustard, dijon mustard, worcestershire, liquid smoke pickapeppa and seasonings. Stir and then add in ketchup and vinegar. Add to the ground meat and simmer, I usually let ours simmer for about 30 minutes before serving but it can be served immediately.
Scoop onto buns and serve with whatever side you like!
Let me know if you like this and gives you some ideas. Some weeks are even easier than this, September we usually start doing LOTS of crockpot recipes.
