Another week of easy weeknight dinners! I’ve been getting some DM’s from you guys and y’all are loving these so I’ll keep sharing. I think this week is the easiest week yet too.
I’ll put the grocery list, which includes everything but some items you may already have but wanted it to be all in one place for you guys + it has all the meals and how to cook them below for your reference. Also, as a note, we go grocery shopping once a week and we make whatever we planned that week. Some weeks we cook a little less, it just depends on our schedule and plans. We also never plan meals for Friday-Sunday because usually that’s our time with friends, family, date night and things like that!
Some of these look long but I promise they’re quick to throw together.

CHICKEN SANDWICHES
- Chicken Breasts
- Hamburger Buns
- Pickles (Optional)
- Chick Fil A Sauce or whatever you like
- Seasoning (Of Choice)
A very easy meal that we always repeat! We prefer these on a cast iron skillet but you can cook however is easiest for you. We like to throw some of THIS SEASONING for our chicken breasts but honestly whatever you like works. Throw the chicken in the skillet until cooked! We like to put ours on buns but you could use whatever bread you like, I add pickles and Chic-Fil-A Sauce, then enjoy!
Serve with some chips or side salad!
ENCHILADAS + RICE & BEANS
- Chicken or Ground Meat
- Tortillas
- Cheese
- Jalapenos
- Enchilada Sauce
- Taco Seasoning
- Salsa
I haven’t decided if I’m doing chicken or ground meat this week so I’ll tell you how I cook both. It’s basically the same anyway.
Chicken: boil chicken + shred + mix in taco seasoning and a little enchilada sauce
Ground Meat: prepare ground meat (drain) + then mix in seasoning and some salsa, simmer for 10 minutes then add in a little enchilada sauce.
Preheat the oven on 375 and add enough enchilada sauce to the bottom of the baking dish to cover it. Add some meat mixture to a tortilla, add cheese (if you want anything else go ahead as well), roll it up and place it into the baking dish. Cover the tortillas with the remaining enchilada sauce, add cheese & jalapenos, cover with foil and bake until bubbly. Once it’s bubbly, I like to take the foil off and bake for an additional 5-10 minutes.
Serve with mexican rice & beans!
CROCKPOT BBQ CHICKEN BAKED POTATOES
- Chicken Breasts
- BBQ Sauce (I usually just use whatever kind we have)
- Worcestershire Sauce
- Soy Sauce
- Brown Sugar (About 3 Tablespoons)
- Apple Cider Vinegar (2 Tablespoons)
- Onion (Optional)
- Jalapeno (Optional)
- Seasonings (I usually just throw in whatever I’m feeling that day)
- Potatoes
We found this recipe years ago and have made it our own, you can just use bbq sauce if that’s all you want. I just labeled everything that we personally put in the crockpot.
All you do it put the all of the sauce, chopped onion, chopped jalapenos, seasonings and chicken in the crockpot. Cook on low for 8 hours. Once it’s done, it’ll shred with forks.
We eat with baked potatoes with all of the fixins!

Don’t come for me, but I’m not making my own sauce this week but I do jazz up the store bought kind. I’m not about to tell you how to cook spaghetti because well, you already know!lol
Serve with a side salad & garlic bread!
MALIBU CHICKEN + GREEN BEANS + SALAD
- Chicken
- Panko Bread Crumbs
- Egg Yolks (3)
- Garlic
- Parmesan Cheese
- Parsley
- Garlic Powder
- Salt & Peper
- Ham
- Monterey Jack Cheese
- Grey Poupon Dijon Mustard
- Mayo
- Mustard
- Honey
So I can’t take credit for this but it’s SO good! I found this on Alexa Anglin’s blog – here. It’s a favorite in our house though so hopefully you love it!
The night before put the chicken, garlic and egg yolks in a ziplock overnight! The sauce you mix dijon mustard, mustard, mayo and honey together and keep in the fridge until you serve. Preheat oven to 400, mix breadcrumbs, seasonings and cheese together. Dip the chicken in and add to baking dish. Bake chicken for about 15 minutes on each side then you add some ham + cheese to the top and cook until cheese is melted. Remove and add the mustard sauce on top.
Serve with a veggie + side salad!
