Hey y’all! I got requests to share our meals again so here we are! I’m trying a couple new recipes so I will keep you posted on these. We cook at home most nights and I have lots of requests to share for meal inspo. We keep a lot of the same things in the rotation which is why I quit sharing but we are now looking to try new things so, I’ll share as long as y’all like.
Also, as a note, we go grocery shopping once a week and we make whatever we planned that week. Some weeks we cook a little less, it just depends on our schedule and plans. We also never plan meals for Friday-Saturday because usually that’s our time with friends, family, date night and things like that!

- TUESDAY | GRILLED CHICKEN + VEGGIES + SALAD

- THURSDAY | COOL RANCH TOSTADAS
BUFFALO CHICKEN TACOS + CREAMY JALAPENO RANCH
- Corn Tortillas
- Chicken
- Buffalo Sauce
- Butter
- Ranch Seasoning.
- Salt & Peper
- Cheese (I always use whatever we have)
- Sour Cream
- Mayo
- Buttermilk
- Parsley
- Dried Dill
- Garlic Powder
- Onion Powder
- Picked Jalapenos (I usually use a fresh jalapeno also)
- Salt
- Olive Oil
FOR THE CHICKEN | Combine chicken, hot sauce, butter, ranch seasoning, salt and pepper. I cook mine on low for about 5 hours. Once the chicken is done, you shred and prepare the tacos.
Preheat your oven to 425. Apply a little oil to the tortillas and add your chicken and cheese. Fold the other have of the tortilla over the filling and press to adhere. Place in the oven and bake for about 8 minutes then flip and add for another 8 minutes or until the tortillas are crispy.
FOR THE JALAPENO RANCH | I add all of the ingredients to a blender and blend until creamy. Ingredients being: sour cream, mayo, buttermilk, parsley, dried dill, ranch seasoning, garlic powder, onion powder, jalapenos and salt.

This looks like a lot but it’s so easy! I just pour until I like the smell and taste so I don’t have measurements, I’m sorry!!!
But you just sauté the veggies then cook ground meat. Drain and then add all ingredients. I personally like to let it simmer for at least 30 minutes but you definitely don’t have to.
Serve with chips or side salad!

GRILLED CHICKEN + SALAD + VEGGIES
- Chicken Breast
- Veggies (I’ll get whatever is fresh at the local grocery store)
- Shredded Lettuce
- Tomato
- Cucumber
- Bell Pepper
- Carrots
- Pepperoncini’s
- Black Olives
- Bacon Bits
- Eggs (Boiled)
We just add whatever seasoning we are feeling that day and grill the chicken and veggies. All the other ingredients I combine into a salad.
