Hey y’all! I got requests to share our meals again so here we are! I’m trying a couple new recipes so I will keep you posted on these. We cook at home most nights and I have lots of requests to share for meal inspo. We keep a lot of the same things in the rotation which is why I quit sharing but we are now looking to try new things so, I’ll share as long as y’all like.
Also, as a note, we go grocery shopping once a week and we make whatever we planned that week. Some weeks we cook a little less, it just depends on our schedule and plans. We also never plan meals for Friday-Saturday because usually that’s our time with friends, family, date night and things like that!

- SUNDAY | TBD
- MONDAY | TBD – We will probably grill out or something for Memorial Day.
- TUESDAY | Mexican Lasagna
- WEDNESDAY | Chicken + Veggies + Salad
- THURSDAY | Fish Tacos
Mexican Lasagna
- Tortillas
- Ground Meat
- Onion
- Jalapeno
- Taco Seasoning
- Half jar of salsa
- Corn
- Black or Pinto Beans
- Mexican Blend Cheese
Sauté the onion and jalapeno, add ground meat and cook. I like to drain and then add in taco seasoning and half of a jar of salsa. Cook this for about 5-10 minutes.
Add some of the meat mixture to the bottom of your dish, add tortillas and layer everything.
Preheat oven to 375, covered with foil and throw in until cheese is bubbly. Take off foil and cook for an additional 10 minutes.
Serve with sour cream, guacamole, chips, salsa, lime or whatever else you like.
Chicken + Fresh Veggies + Salad
- Chicken Breasts
- Fresh Veggies
- Salad (everything I will add is below)
- Lettuce
- Tomato
- Cucumber
- Pepperochinis
- Boiled Egg
- Bacon Bits
- Bell Pepper
- Carrots
- Black Olives
Not sure what exactly I’m going to do with the chicken just yet but I’ll decide on the day!lol. I’ll get some fresh veggies and make a good salad to go with it.
GRILLED CHICKEN + SALAD + VEGGIES
- Chicken Breast
- Veggies (I’ll get whatever is fresh at the local grocery store)
- Shredded Lettuce
- Tomato
- Cucumber
- Bell Pepper
- Carrots
- Pepperoncini’s
- Black Olives
- Bacon Bits
- Eggs (Boiled)
We just add whatever seasoning we are feeling that day and grill the chicken and veggies. All the other ingredients I combine into a salad.

FISH TACOS
- Fish or Shrimp (we usually get fresh from our grocery store but you could use frozen)
- Olive Oil
Fish Rub
- Chili Powder
- Cumin
- Garlic Powder
- Paprika
- Salt
- Pepper
- Oregano
- Onion Powder
- Cajun Seasoning
Tacos
- Tortillas
- Cole Slaw
- Limes
- Cheese
- Pico & Avocado (if you like)
Sauce
- Mayo
- Sour Cream
- Lime Juice
- Garlic Powder
- Cumin
- Sriracha
Bake fish at 400 for about 20 minutes. Once this is cooked. Assemble your tacos and enjoy!
