Hey guys! I know I skipped last week but it was my birthday + wasn’t home much so didn’t share but we are back with some easy weeknight dinners!
I’ll put the grocery list, which includes everything but some items you may already have but wanted it to be all in one place for you guys + it has all the meals and how to cook them below for your reference. Also, as a note, we go grocery shopping once a week and we make whatever we planned that week. Some weeks we cook a little less, it just depends on our schedule and plans. We also never plan meals for Friday-Sunday because usually that’s our time with friends, family, date night and things like that!
Some of these look long but I promise they’re quick to throw together.
*I wanted to note that on the grocery list, I put everything on there but you might have some of most of the items on the list. So just a note*

- MONDAY | CAJUN CHICKEN PASTA
- TUESDAY | CROCKPOT SMOTHERED STEAKS + MASHED POTATOES + SALAD
- WEDNESDAY | TACOS / TACO SALAD
- THURSDAY | GRILLED CHICKEN + SALAD + GREEN BEANS
CASSEROLE
- Ground Meat
- Bell Pepper
- Onion
- 2 Cups Cooked Rice
- Green Olives
- Pimentos
- Cream of Mushroom Soup
- Ketchup
- Seasonings of choice
Not sure what to call this because I grew up having it and it was just called casserole. It’s not healthy but I was craving it so here we are!lol.
Preheat oven to 375. Cook ground meat and rice. Combine ground meat, rice, cream of mushroom soup, seasonings, and ketchup. Spray baking dish and dump everything in, top with cheese, add green olives on top. Bake until cheese is bubbly.
Serve with side salad or bread if you’d like!
CAJUN CHICKEN PASTA
- Chicken
- Pasta (We use THIS pasta only)
- Half & Half (About 1/2 a cup)
- Butter or Olive Oil (just a tablespoon or so)
- Rotel (1-2 cans)
- Parmesan Cheese – Shredded
- Asparagus (Optional)
- Onion (Optional)
- Cajun Seasoning
- Garlic Bread (Optional)
For the chicken & pasta- we prefer to cook ours in the cast iron skillet for this but cook your chicken however you like and your seasoning of choice (we use this seasoning for ours). You could also do a rotisserie chicken or prepare the day before. Go ahead and boil your pasta of choice.
For the sauce – put a sauce pan on medium heat, add in your butter or oil. You will throw your onion and asparagus into the pan and sauté. Once those are done, turn the heat to low. Add in your Rotel and half & half + Cajun seasoning. Once this is combined add a handful of parmesan cheese and stir. We then add in the cooked chicken and noodles.
Top with parmesan cheese and serve with garlic bread!
CROCKPOT SMOTHERED STEAKS + MASHED POTATOES + SALAD
- Cubed Steak (We buy a pack of 2)
- 1 Au Jus Gravy Packet
- 1 French Onion Soup Packet
- 1 Can – Cream of Chicken Soup
- 1/2 Cup Water
- 3 Tablespoons Cornstarch
- 3 Tablespoons Cold Water
Put gravy packet, french onion soup packet, cream of chicken soup and water in crock pot – whisk all of this together. Once combined add in steaks and cook on low for 6-8 hours. After cooking, combine cornstarch and cold water in a bowl – add this into the crock pot. Turn on high for about 30 minutes (this will thicken the gravy).
Serve with mashed potatoes and a side salad!
TACOS / TACO SALAD
- Ground Meat
- Taco Packet
- Ranch Seasoning
- Lettuce
- Tomato
- Cheese
- Black or Pinto Beans
- Corn
- Jalapenos (Optional)
- Thousand Island
- Pace Salsa (has to be this kind)
- Tortilla Chips
- Tortillas or Taco Shells
Pretty easy meal. Chase prefers tacos and I prefer taco salad. Not going to tell you much other than the dressing I make for my taco salad. It sounds gross but it’s so good!
For the dressing – mix equal parts Pace Salsa and Thousand Island Salad Dressing.
